Pathogens in the Incubation Phase

• When hatcheries receive contaminated eggs, little can be done to eliminate such contamination.

• This represents a great risk, since inside the incubator there are ideal conditions for the growth of pathogenic microorganisms (high temperature and humidity), and they can contaminate the rest of the eggs inside the incubator.

• Although the eggs have a good defense system to prevent contamination (4-layer shell), the morphological differences between them (greater or lesser thickness of the shell and morphological problems of the same, as well as its pores) can allow the penetration of bacteria and fungi capable of killing the embryo.

Although the morphologically normal egg has this effective defense system, it can be defeated when the pathogen load is too high. A clean egg has on average 10,000 colonies of bacteria and fungi on its surface, but a dirty egg can have up to 200,000 colonies.

At present, the only tool available in the poultry farmer's arsenal is immediate disinfection after oviposition. It is ideally done on the farm, as soon as possible after the egg is laid, because the high temperature of the egg when laid makes the pores of the shell more open for a moment, and when cooled they close leaving the microorganisms inside, making it difficult if not impossible to disinfect them later. When this happens, the incubation process begins with an unhealthy egg.

Cleaning and Disinfection in the Incubation Process

Although comprehensive sanitation programs incorporate several factors, such as the focus on starting with a Healthy Egg, maintaining adequate isolation of the hatchery from the rest of the production areas, and managing the Process Flow to try to mitigate cross-contamination, the trend is to focus the main efforts on Cleaning and Disinfection, using disinfectant chemicals.

Basically, the incubation process can be divided into 2 stages, the first of about 18.5 days (between 18 and 19 days) in which the eggs pass in the incubating machines and the second, of 2.5 (between 2 and 3) days in which they spend in the hatching machines.

Cleaning and Disinfection in the Incubation Process

Critical Control Points:
In the First Phase, due to the characteristics of the environment in which it takes place, since inside the incubators is where pathogenic microorganisms can most
easily reproduce, that is where cleaning should be maximized. Special attention should be paid to areas that are more difficult to clean and those that, due to their operation, facilitate the spread of pathogens, such as: ducts, blades, coils, air intake and humidification system, both in incubating machines and in work rooms and the building in general.

In the Second Phase, the cleaning or its absence becomes more obvious, because the hatching machines are totally impregnated with down from the chicks that hatched, which makes a deep cleaning necessary. The most important thing about this phase is to prevent the creation of Bio-films through which colonies of microorganisms can be protected from the effects of disinfectants.
